Honey-Mustard Pork Tenderloin

1lb. pork tenderloin, trimmed

2tbsp. stone-ground mustard

4 tbsp. honey

1 1/2 tsp. chopped fresh rosemary

3/4 tsp. chipotle-chili powder

  1. Preheat oven to 375° F. Line a baking dish with foil; coat foil with nonstick cooking spray. Place pork in baking dish; set aside.
  2. In a small bowl combine mustard, honey, rosemary and chipotle-chili powder. Spread on pork to coat evenly.
  3. Roast pork, uncovered, 25 minutes or until an instant-read thermometer registers 145°F. Remove from oven and let stand 3 minutes before slicing. Serve warm.

Make it a meal: Serve with sautéed mixed vegetables and herbed quinoa
