How to Select Escarole

Be sure to choose escarole that looks green and fresh. Just like many other greens, stay away from damaged or browning leaves.

How to Store

Store in a plastic container with roots down. Keep refrigerated 3 to 5 days. If the roots appear dry, add some water to the container to keep them moist.

Escarole Walnut Salad

Servings: 4    Preparation Time: 5 Min     Calories/Serving: 320

Ingredients:

  • 2 tbsp sherry vinegar
  • 2 tsp Dijon mustard
  • 2 shallots, finely chopped
  • 1/4 cup plus 2 tbsp extra-virgin olive oil
  • 5 cups sliced escarole
  • 1/3 cup toasted walnuts, coarsely chopped
  • Coarse salt and freshly ground pepper

Directions:

Stir together vinegar, mustard, and shallots in a small bowl. Gradually whisk in oil. Toss escarole with vinaigrette, and sprinkle with walnuts. Season with salt and pepper.
