Kalua Tenderloin with Pineapple Slaw

Pork Tenderloin:

1 (1-lb) pork tenderloin

1 tbsp. liquid smoke

2 tsp. olive oil

Pineapple Slaw:

cup fresh lime juice.

2 tbsp. extra virgin olive oil

2 tsp. sugar

4 cups coleslaw mix

1 ¼ cups diced fresh pineapple

2 tbsp. finely chopped fresh cilantro

1 tbsp. finely chopped jalapeño (optional)

  1. Preheat oven to 425 F. Season pork with salt and pepper to taste; drizzle with liquid smoke. In a large ovenproof skillet heat oil over medium-high heat. Add pork; cook 3 minutes, turning brown evenly on all sides.
  2. Transfer skillet from oven. Let pork stand 10 minutes before cutting into thin slices.
  3. For the slaw, in a small bowl whisk together lime juice, olive oil and sugar. In a medium bowl combine coleslaw mic, pineapple, cilantro and (if desired) jalapeño. Add lime mixture, and season with salt and pepper to taste; toss to coat. Serve with sliced pork.
