Broiled Citrus Spiced Steak Kabob Salad

Prep time: 35 minutes plus marinating
Broil Time: 12 minutes
Serves: 4

  • ½ cup fresh orange juice
  •  ¼ cup extra virgin olive oil
  • 3 tbsp sweet onion & herb seasoning
  • 1 pound sirloin steaks, cut into 1 ½-inch pieces
  • 8 (9.75-inch) wooden skewers
  • 2 small portobello mushrooms, each cut into 8 wedges
  • 1 medium red bell pepper, cut into 1 ½-inch pieces
  • 1 medium zucchini, cut crosswise into ¾-inch slices
  • 1 bag (9 ounces) chopped hearts of romaine lettuce
  • 1 cup halved red grape tomatoes


  1. In small bowl, whisk orange juice, oil and seasoning.
  2. Place beef in large zip-top plastic bag; pour ½ cup marinade over beef. Seal bag, pressing out excess air; refrigerate at least 30 minutes or up to 4 hours.
  3. Preheat broiler to high. Soak skewers in water 10 minutes. In large bowl, toss mushrooms, bell pepper, zucchini and ¼ cup remaining marinade. Remove beef from marinade; discard marinade. Alternatively thread beef and vegetables onto skewer.
  4. Broil Kabobs 12 minutes or until internal temperature of beef reaches 145° for medium-rare, turning kabobs a quarter turn every 3 minutes. Serve kabobs over lettuce and tomatoes.
