Hummus Endive Boats with Pomegranate Seeds

Prep Time: 10 min
Calories/serving: 125

Ingredients:

  • 2 small endive heads, separated into spears (~16 spears)
  • 1 cup hummus
  • 2 tbsp. pomegranate seeds
  • Lemon zest, for garnish (optional)

Directions:

  1. Fill each endive spear with about 1 tbsp hummus.
  2. Top hummus with pomegranate seeds.
  3. If using, sprinkle lemon zest on over stuffed endive spears.
  4. Serve cold.
