Arugula & Red Onion Salad

 1 ½ cups B&W baby arugula
 1 red onion, thinly sliced
 1 tbsp red wine vinegar
 1 tsp finely chopped garlic
 1 ½ tbsp olive oil
 Salt and pepper to taste (optional)

Clean, trim and dry arugula leaves.


Place leaves in salad bowl; add onion slices.


Blend vinegar, oil, garlic, salt and pepper and pour over salad. Toss well and serve.
