Cobb Avocado Toast

 2 large avocados, peeled and pitted
 4 slices whole grain bread, toasted
 4 hard-cooked eggs, chopped
 1 cup halved grape tomatoes
 3 tbsp chunky blue cheese yogurt dressing
 Fresh dill for garnish (optional)

In medium bowl, mash avocado with back of a fork until chunky; stir in ¼ teaspoon each salt and pepper.

Spread avocado mixture on toast; top with alternating rows of eggs and tomatoes. Serve toasts drizzled with dressing; sprinkle with pepper and garnish with dill, if desired.

Chef Tip: Customize this recipe by swapping the hard-cooked eggs with smoked salmon and/or the dressing with everything bagel seasoning.
