 1 lb coconut-encrusted cod fillets
 8 soft taco flour tortillas
 1 cup pineapple salsa
 ½ cup ShopRite® fancy shreds Mexican blend cheese

Prepare cod as label directs.

Heat tortillas between 2 damp paper towels in microwave oven on high 45 seconds or until warm. With 2 forks, flake fish; serve in tortillas topped with salsa and cheese.

Chef Tip:
Customize this recipe by swapping the fish with teriyaki beef stir-fry with peppers and onions and/or the pineapple salsa with ShopRite® three bean with roasted corn salsa.
