Peachy Chipotle Salsa

 2 cups diced ripe white peaches
 ¾ cup fresh lemon juice
 ½ cup red onion diced
 ½ cup red bell pepper diced
 ¼ cup canned chipotle chili peppers, seeded and minced
 1 ½ tsp minced garlic
 1 ½ tsp toasted and crushed cumin seeds
 ½ tsp minced fresh oregano
 salt and freshly ground pepper to taste

1. Combine all ingredients in a large bowl.

2. Cover and refrigerate for up to 3 days.

*Delicious over baked fish or chicken.

Make it Gluten Free: Dependent on using a Gluten Free oats.
