Ratatouille & Wheat Berry Salad with Feta

 ½ cup dry wheat berries
 1 tbsp raw pine nuts
 5 oz ShopRite store made grilled vegetables, chopped
 ¼ cup red seedless grapes
 ¼ cup packed baby arugula
 3 tbsp crumbled feta cheese
 3 tbsp organic balsamic vinaigrette dressing
 1 tsp chopped fresh parsley
 ½ tsp chopped fresh thyme

Prepare wheat berries as label directs; fl uff with fork. Transfer to large bowl; cool.

In small skillet, toast pine nuts over medium-high heat 4 minutes or until lightly browned and fragrant, stirring frequently; transfer to plate to cool.

Fold remaining ingredients and pine nuts into wheat berries.
